A classic but with a twist (aka pomegranates vs. grapes).

This Whole30 Winter Chicken Salad is just begging you to prep for easy lunches. I swapped out the usual grapes for pomegranates and wow this is a fun twist on one of my favorites. And of course, waaaay healthier.
Winter Chicken Salad
Ingredients
- 1/2 C pomegranate seeds
- 2 organic apples (I used gala)
- 1 lb organic chicken breast
- 4-6 stalks organic celery
- 1/2 C walnuts
- 1/2 C Primal Kitchen Foods avocado mayo
- salt and pepper, to taste
Instructions
- 1. Cook your chicken and prep other ingredients while you wait. I boiled my chicken on the stove then shredded it once ready.
- 2. Wash and chop apples and celery then combine them in a bowl with the pomegranate seeds, walnuts and mayo.
- 3. Once the chicken is cool, fold into other ingredients and season with salt and pepper.
- 4. Eat alone or over a salad for W30 or with crackers or a wrap otherwise!
