It seems that meatloaf is one of those things that you either do or do not like. If you’re on the side of not liking meatloaf, this recipe is here to prove you wrong. Plus, if you like burgers, what’s not to like about this dish?! And if you do like meatloaf, well this recipe is about to be your new favorite.

It only takes about 5 minutes to prepare and requires very minimal effort. You basically just combine all of the ingredients and pop it into the oven for an hour. It’s so easy and is great for anything from family dinner to meal prep for the week.

While this Gluten Free Meatloaf calls for gluten free bread, you can also use gluten free oats or bread crumbs in its place. Check out the recipe for exact measurements and such!

Ingredients Method

Ingredients
  

Meatloaf
  • 1 ½ lbs ground beef
  • 6 slices gluten free bread (can sub ¾ cup bread crumbs or gluten free oats)
  • 1 egg, beaten
  • ¼ onion, grated or diced
  • 1 tsp garlic powder
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ cup (bone) broth, of choice (I use Bonafide Provisions chicken bone broth)
Toppings (optional)
  • ketchup, to top I use no added sugar ketchup from Primal Kitchen)
  • fresh thyme or oregano

Method
 

  1. Preheat the oven to 350°.
  2. Place bread in a bowl and pour broth over the top. Use your hands to break up the bread into small pieces.
  3. Next, combine all ingredients aside from the ground meat and mix to combine.
  4. Gently mix in the ground meat until combined, then place into a loaf pan.
  5. Cook the meatloaf for 1 hour.
  6. Top with ketchup if you'd like, then slice and serve with sides of your choice.
