The Best Gluten Free Meatloaf

Ingredients
  

Meatloaf

  • 1 ½ lbs ground beef
  • 6 slices gluten free bread (can sub ¾ cup bread crumbs or gluten free oats)
  • 1 egg, beaten
  • ¼ onion, grated or diced
  • 1 tsp garlic powder
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ cup (bone) broth, of choice (I use Bonafide Provisions chicken bone broth)

Toppings (optional)

  • ketchup, to top I use no added sugar ketchup from Primal Kitchen)
  • fresh thyme or oregano

Instructions
 

  • Preheat the oven to 350°.
  • Place bread in a bowl and pour broth over the top. Use your hands to break up the bread into small pieces.
  • Next, combine all ingredients aside from the ground meat and mix to combine.
  • Gently mix in the ground meat until combined, then place into a loaf pan.
  • Cook the meatloaf for 1 hour.
  • Top with ketchup if you'd like, then slice and serve with sides of your choice.
