Mom’s Marinated Chicken

My mom makes the best marinated grilled chicken, and she’s allowing me to share it with you all!

I love it hot or cold, with potatoes and roasted veggies or over a salad with lots of fresh greens. In my mom’s honor, I’m going to call this Whole30 summer staple Mom’s Marinated Chicken. What will you serve it with?

Mom’s Marinated Chicken

Ingredients Method

Ingredients
  

  • 2 lbs chicken breast
  • 1 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tsp pepper
  • 2 tbsp dried basil
  • 2 tbsp dried parsley
  • ¾ tsp celery salt
  • ¾ tsp salt
  • ¼ cup apple cider vinegar
  • ⅔ cup olive or avocado oil

Method
 

  1. Cut your chicken into pieces or leave as a full breast, up to you!
  2. Add all ingredients to a bowl to marinate for an hour or more. You can also add it to a freezer safe bag to freeze then thaw when you’re ready to use it.
  3. Place chicken and some of the marinade into a pan on the stove and cook on medium heat. You may need to do this in two batches.
  4. Towards the end of cooking, turn the heat up slightly to get rid of the excess moisture and blacken the chicken. This makes it a little crispy on the outside!
