I’ve paired these Whole30 Garlic & Rosemary Roasted Potatoes with eggs in the morning and chicken with veggies at night and they absolutely never disappoint. With minimal effort and big flavor, each bite is crispy on the outside and fluffy on the inside. What more could you want?
Garlic & Rosemary Roasted Potatoes
Ingredients
- 1 bag organic fingerling potatoes
- 1 T olive oil or avocado oil
- 1 T fresh rosemary
- 1 t garlic, minced
- sea salt, to taste
Instructions
- Preheat oven to 425 degrees and line a baking sheet with parchment paper.
- Wash, dry then slice potatoes in half.
- Combine potatoes and all other ingredients in a bowl and coat potatoes evenly.
- Lay out potatoes on the baking sheet ensuring none are overlapping.
- Bake for 25-30 minutes, flipping half way through.
