Garlic & Rosemary Roasted Potatoes

Ingredients
  

  • 1 bag organic fingerling potatoes
  • 1 T olive oil or avocado oil
  • 1 T fresh rosemary
  • 1 t garlic, minced
  • sea salt, to taste

Instructions
 

  • Preheat oven to 425 degrees and line a baking sheet with parchment paper.
  • Wash, dry then slice potatoes in half.
  • Combine potatoes and all other ingredients in a bowl and coat potatoes evenly.
  • Lay out potatoes on the baking sheet ensuring none are overlapping.
  • Bake for 25-30 minutes, flipping half way through.
