Mashed Potatoes

Garlic & Chive Mashed Potatoes

Lactose Free (aka easier on the digestive system, especially if you struggle with dairy) & Whole30 creamy Garlic & Chive Mashed Potatoes. No need to wait until Thanksgiving, enjoy these with my Cassava Flour Breaded Chicken (here) or a steak dinner with my homemade Chimichurri Sauce (here). You don’t need an occasion bigger than “it’s Tuesday night and I want Mashed Potatoes” in my opinion.

Let’s be honest, the second fall hits I immediately have Thanksgiving on my mind. This recipe is a direct result of my impatience while waiting for the holiday to roll around, but like I said, no need to wait! They are made with nutritious, real ingredients, so they can fit in seamlessly to your weeknight routine. And honestly, they taste so much like the ones my mom makes, which are amazing, let me tell you.

Garlic & Chive Mashed Potatoes

Ingredients Method

Ingredients
  

  • 12 small or 6 med/large Yukon gold potatoes
  • ¼ cup almond milk (I used MALK Organics for W30 compliant)
  • 3 + 1 tbsp ghee, separated (can sub butter if not W30)
  • 1 tbsp garlic, minced
  • salt, to taste
  • chives, to taste

Method
 

  1. Place potatoes in a saucepan and cover with water, just hitting the top of the potatoes. Bring water to a boil then reduce the heat.
  2. Cover and cook for 25-30 minutes (small potatoes) or 30-35 (med-large potatoes), or until fork tender.
  3. Drain then mash potatoes. Next, slowly add in the milk, mixing with each addition. Next add 3 tbsp of ghee, garlic and a generous amount of salt.
  4. Blend with immersion blender until smooth. Blend more for creamy and less for chunky depending on how you like them!
  5. Stir in the chives then top with remaining tbsp of ghee and salt/pepper.

    WOW! These were so easy to make and so yummy. I don’t think I will ever use another mashed potato recipe again. All of Kayla’s recipes are so good! Thankful for Kayla’s recipes during my January Whole30 ❤ I feel like should feel bad eating them since they are so good but they are Whole30!
