French Silk Pie (GF)

This no fuss and delicious French Silk Pie is made with minimal, real food ingredients and can be adjusted to meet multiple dietary needs without sacrificing any taste. The silky chocolate filling melts in your mouth and I still cannot believe how easy it is to whip up!

One of my New Year’s resolutions this year was to become a better baker. Hear me out… baking with food allergies and dietary needs can be very tricky. I find baking to be difficult as is, but it also takes a lot of time to find ingredients that fit into multiple dietary needs that taste good AND work how they need to in a dessert recipe.

My husband’s favorite dessert is French Silk Pie, so I knew that was a recipe I wanted to recreate my own version of this year. Typically, this dessert consists of eggs, cream, butter, sugar and of course, chocolate, but I found a way to make it using just a few real food ingredients that aced his test! Trust me, he LOVES French Silk Pie and couldn’t get enough of this recipe, so I’d say it is a winner!

  • Gluten Free Pie Shells
  • Chocolate Chips (dairy free/paleo, dairy free/sugar free, dairy free/paleo)
  • Coconut Cream
  • Avocado
  • Vanilla Extract (check for paleo compliance, as needed)
  • Pure Maple Syrup
  • Salt
  • Homemade Coconut Whipped Cream (recipe below!)

Ingredients
  

  • 1 pie shell (I use The Maine Pie Co. for gluten free)
  • 1 ½ cups chocolate chips, melted
  • 2 ¼ cups canned coconut cream  (be sure to use only the hardened part and no liquid, 2-3 cans needed)
  • 1 medium ripe avocado
  • 1 ½ tsp vanilla extract
  • ½ cup maple syrup (can sub honey)
  • 1 tsp salt

  • Food Processor

Method
 

  1. Bake the crust according to the instructions of the shell you are using and once finished, set it aside to cool.
  2. In a microwave safe bowl, melt the chocolate in 30 second increments, mixing between, until melted and smooth.
  3. While the crust cools, add all the remaining ingredients, including the melted chocolate, into a food processor and blend until completely smooth. Be sure to scrape the edges with a spatula to get every bit incorporated.
  4. Pour the filling into the pie shell, spread it out evenly and then place it in the fridge to set.
  5. Ensure the pie is fully cooled and set, about 5 hours-overnight, before serving. I recommend letting it sit overnight!
  6. Top with homemade whipped cream and chocolate shavings if you'd like. Enjoy!

Ingredients
  

  • 1 15 oz can coconut cream, chilled in the fridge overnight (use the scoopable part only!)
  • ¼ cup powdered sugar (monkfruit powdered sugar for sugar free & paleo)
  • 1 tsp vanilla extract

Equipment

  • Hand Mixer

Method
 

  1. Place jar of coconut cream in the fridge to chill overnight.
  2. 30 minutes before you make the whipped cream, place your glass bowl and hand mixer beaters in the freezer to chill.
  3. Once the bowl and beaters are cold, remove the hardened part of the can of coconut cream from the can, leaving behind the liquid, and add to the bowl. You can use the remaining coconut water for smoothies if you wish!
  4. Whip the coconut cream for 1 minute until thick yet smooth.
  5. Add the vanilla and powdered sugar, then mix until fully incorporated.
  6. Keep cold until ready to serve.

Notes

Coconut cream can be tricky, so I always buy an extra can just incase I got one that doesn’t hold it’s shape!

    I can’t speak to the whipped cream part of this recipe (subbed cool whip instead) but the “french silk” filling is so so good. I love that the ingredients are simple and the recipe is easy to make. I give 4 stars because I would say the filling is not as light and airy as a traditional french silk pie. It has more of a fudgy consistency. Still great because it’s decadent but not overly sweet.

      I’m so thrilled you loved it, Courtney! I would guess the airy part of traditional French silk comes from eggs, which I wanted to leave out on this recipe so that those that don’t have eggs in their diet can enjoy it! I’m glad you loved the fudgy-ness and all. 🙂

      I often get the generic ones from whatever store I’m at! Any should work, but opt to pick up an extra can or so incase! If you need help using it up, I have a ton of recipes that call for it. 🙂 Enjoy!

    I made this for Father’s Day. It was a huge hit. I didn’t do the coconut cream topping to lessen time preparing, but I used almond milk whipped topping and regular for those that were not DF. You are sure a fantastic recipe creator Kayla!

    Do you use a can of coconut milk and take the solid part or do you use the actual coconut cream can?

      You can do either but you’ll have best luck with a can of coconut cream!

    This is BEYOND FANTASTIC!!!! After it set I didnt waste anytime even making the whipped cream because it looked too delicious to wait! I can’t wait to be more patient next time and make it with thr whip cream!!! Thank you for a delicious dessert!
