French Silk Pie

Ingredients
  

  • 1 pie shell (I use The Maine Pie Co. for gluten free)
  • 1 ½ cups chocolate chips, melted
  • 2 ¼ cups canned coconut cream  (be sure to use only the hardened part and no liquid, 2-3 cans needed)
  • 1 medium ripe avocado
  • 1 ½ tsp vanilla extract
  • ½ cup maple syrup (can sub honey)
  • 1 tsp salt

Instructions
 

  • Bake the crust according to the instructions of the shell you are using and once finished, set it aside to cool.
  • In a microwave safe bowl, melt the chocolate in 30 second increments, mixing between, until melted and smooth.
  • While the crust cools, add all the remaining ingredients, including the melted chocolate, into a food processor and blend until completely smooth. Be sure to scrape the edges with a spatula to get every bit incorporated.
  • Pour the filling into the pie shell, spread it out evenly and then place it in the fridge to set.
  • Ensure the pie is fully cooled and set, about 5 hours-overnight, before serving. I recommend letting it sit overnight!
  • Top with homemade whipped cream and chocolate shavings if you'd like. Enjoy!
