French Silk Pie

Ingredients
  

  • 1 pie shell (I use The Maine Pie Co. for gluten free)
  • 1 ½ cups chocolate chips, melted
  • 2 ¼ cups canned coconut cream  (be sure to use only the hardened part and no liquid, 2-3 cans needed)
  • 1 medium ripe avocado
  • 1 ½ tsp vanilla extract
  • ½ cup maple syrup (can sub honey)
  • 1 tsp salt

Method
 

  1. Bake the crust according to the instructions of the shell you are using and once finished, set it aside to cool.
  2. In a microwave safe bowl, melt the chocolate in 30 second increments, mixing between, until melted and smooth.
  3. While the crust cools, add all the remaining ingredients, including the melted chocolate, into a food processor and blend until completely smooth. Be sure to scrape the edges with a spatula to get every bit incorporated.
  4. Pour the filling into the pie shell, spread it out evenly and then place it in the fridge to set.
  5. Ensure the pie is fully cooled and set, about 5 hours-overnight, before serving. I recommend letting it sit overnight!
  6. Top with homemade whipped cream and chocolate shavings if you'd like. Enjoy!
