Whole30 Classic Chicken Salad

One of my favorite things to make for quick lunches is this Whole30 Classic Chicken Salad made with just five ingredients. It’s Whole30 compliant when eaten in a lettuce wrap and honestly tastes like the real deal. Not on Whole30? Enjoy it in a sandwich or with crackers and veggies!

Just Five Ingredients

Lunch meals can be hard for me. I often find myself snacking on nuts and veggies (and a second cup of coffee) in the afternoon. It’s because I rarely want to take the time to cook or put together a balanced meal. This Whole30 Classic Chicken Salad solves all my lunchtime problems by being easy to throw together. Plus, it is made up of only five natural, simple ingredients!

Whole30 Classic Chicken Salad

Give yourself 30 minutes and you’ve got lunches prepped for the week. When I’m on Whole30, I use the Chicken Salad to make lettuce wraps or top over a large bed of spinach. When I’m not on Whole30, you can bet I grab a big plate of celery and Simple Mills crackers and dig in.

Ingredients Method

Ingredients
  

  • 2 cups grapes, halved
  • 1 lb organic chicken
  • 6-8 small stalks organic celery, diced
  • 1 cup walnuts
  • ¾ cup compliant mayo (I use Primal Kitchen Foods avocado mayo)
  • salt and pepper, to taste

Method
 

  1. Cook your chicken and prep other ingredients while you wait. I boiled my chicken on the stove then shredded it once ready.
  2. Wash and chop grapes and celery, then combine them in a bowl with the walnuts and mayo.
  3. Once the chicken is cool, fold into the other ingredients and season with salt and pepper. Eat alone, with crackers or in a lettuce wrap for Whole30.

    This might be my favorite recipe by Kayla. It is so easy and I love meal prepping it for work lunches. I also love how I can always switch it up. Sometimes I swap dried cranberries for the grapes when not on whole30 and also like to sub the walnuts for pecans or slivered almonds. And there’s so many different ways to eat it too to switch it up! Next week I’m doing veggie tortilla wraps but love sandwiches, butter lettuce, or honestly just with a fork lol. I can be bad with meal prepping for the week but this is too easy not to! So delicious 🙂
