MAKE IT YOUR OWN!

Since salads are made for customizing, feel free to use any and all of your favorite salad fixings for this. For this recipe, I always reach for:

  • Mixed Greens
  • Cucumbers
  • Cherry Tomatoes
  • Matchstick Carrots
  • Celery
  • Red Onion
  • Chives
  • Ranch Dressing (click here for my recipe!)

This recipe can easily be made vegan by swapping the chicken for chickpeas and the mayo for vegan mayo.

Prep Time 5 minutes mins
Cook Time 10 minutes mins
Total Time 15 minutes mins
Servings: 6
Course: Appetizer, Side Dish, Snack
Ingredients Method

Ingredients

  • 1 lb chicken breast
  • ¼ cup hot sauce or buffalo sauce (I use The New Primal or Cholula)
  • ¼ cup + 1 tbsp avocado oil mayo
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper

Method

  1. Cook chicken. I choose to boil mine in a pot on the stove with water covering the chicken and bring it to a boil, covered for 10 minutes.
  2. Shred the chicken then mix in the avocado mayo, hot sauce/buffalo sauce and spices.
  3. Serve with celery sticks, crackers or chips! Is also great in a salad, a wrap or inside a baked potato.

Total Time 5 minutes mins
Servings: 8
Course: Side Dish
Ingredients Method Notes

Ingredients

  • ½ cup compliant avocado oil mayo (I use my homemade recipe! I have options for vegan & paleo)
  • ¼ cup compliant coconut milk (I like to use light canned to keep it smooth; omit for a dinning sauce!
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chives
  • 1 tbsp cilantro
  • ¼ tsp dill
  • 1 tsp lime juice
  • ¼ tsp salt

Method

  1. Finely chop chives, cilantro and dill, juice lime and mix all ingredients together.
  2. Refrigerate covered for 4-7 days! If you use dried spices, it may last longer.

Notes

If you’d like the consistency to be a little on the runnier side, feel free to add a splash more coconut milk. If you’d like it thicker for a dip, use 1-2 tbsp more avocado mayo or lighten up the coconut milk.

Use dried herbs for a longer lasting dressing.

    5 stars
I made this and ate it in two days. I had to stop myself after the first day. This is good warm and cold. I thought I would eat it on a salad, but ended up eating with carrots, celery, and the ranch also in this recipe. Everything was SO good. I wish I made more. I will probably make more this week. 100% so good and fulfilling for whole30. Did not feel like I was missing out on anything with this and could easily make as a dish to bring to gatherings, potlucks, or parties!
