PB&J Yogurt Cups and PB&J Latte

If you love peanut butter and jelly, this afternoon snack and drink pairing is for you! These PB&J Yogurt Cups and PB&J Latte are the perfect match and made with wholesome, good for you ingredients. Both are easy to make and leave you with the best treat combination!

PB&J Yogurt Cups and PB&J Latte

What you’ll need:

Peanut Butter Granola
PB&J Yogurt Cups

Peanut Butter & Jelly Yogurt Cups (aka peanut butter granola in strawberry yogurt cups)

  • Peanut Butter
  • Vanilla Extract
  • Cashews
  • Almonds
  • Pumpkin Seeds
  • Pecans
  • Peanuts
  • Unsweetened Shredded Coconut
  • Salt
  • Chia Seeds
  • Flaxseeds
  • Coconut Oil
  • Maple Syrup
  • Cinnamon
  • Coconut Sugar
  • Strawberry Yogurt Cups (I love Brown Cow brand)

Peanut Butter & Jelly Latte

Peanut Butter & Jelly Latte:

  • Peanut Milk (click here for my recipe)
  • Strawberries
  • Water
  • Vanilla Coconut Sugar (can sub white granulated sugar)
  • Espresso or Brewed Coffee
  • Ice (if having iced)

Coffee Essentials:

  • Milk Frother
  • Espresso Machine
  • Nespresso Espresso Machine (so great for hosting!)
  • Coffee Spoons
  • Iced Coffee Glasses
  • Ice Mold
  • Pebble Ice Machine
  • Syrup Jars
  • Hyperchiller (a must for chilled drinks!)

Peanut Butter Granola

Ingredients Method

Ingredients
  

  • ⅔ cup peanut butter
  • 1 tbsp vanilla extract
  • ½ cup cashews
  • ½ cup almonds (I use slivered)
  • ½ cup pumpkin seeds
  • ½ cup pecans
  • ½ cup peanuts
  • 1 cup shredded unsweetened coconut
  • ½ tsp salt
  • 2 tbsp chia seeds
  • 2 tbsp flaxseeds
  • 2 tbsp coconut oil, melted
  • ¼ cup maple syrup
  • 2 tbsp cinnamon
  • 2 tbsp coconut sugar 

Method
 

  1. Preheat your oven to 300℉ and line a baking sheet with parchment paper.
  2. Combine all ingredients in a large bowl and mix until fully combined.
  3. Bake the granola for 10-15 minutes, ensuring not to over bake it.
  4. Allow it to cool for 10 minutes or so, then break the granola apart. Note that this granola is more of a softer texture, so it won't crack/crunch! Think of it as a peanut butter cookie style granola.
  5. Pair the granola with strawberry yogurt (I like Brown Cow) for a peanut butter & jelly inspired snack!

Ingredients Equipment Method

Ingredients
  

Peanut Milk
  • 2 cups peanuts (unsalted is recommended)
  • 4 cups water
  • 1 pitted date
  • 1 tbsp vanilla extract
  • ½ tsp salt
Strawberry Jam Syrup
  • 2 cups strawberries  (I use frozen)
  • 1 cup water
  • 1 cup vanilla coconut sugar (can use white granulated sugar)
Peanut Butter & Jelly Latte
  • ½ cup peanut milk (above)
  • 3 tbsp strawberry jam syrup (above)
  • 2 shots espresso
  • ice (if having iced)

Equipment

  • Nut Milk Bag or Mesh Strainer
  • High Powered Blender

Method
 

Peanut Milk
  1. In enough water to cover the peanuts, allow them to soak for 4 hours.
  2. Drain and rinse the peanuts, then combine the soaked peanuts, fresh water, date, vanilla and salt to a high powdered blender.
  3. Over a large bowl, pour the blender contents into a nut milk bag and squeeze all the milk out that you can.
  4. Keep in the fridge in a sealed jar and enjoy within 4 days!
Strawberry Jam Syrup
  1. Combine strawberries, water and sugar in a pan on the stove over medium low heat and stir until the sugar has dissolved completely.
  2. Allow to cool, then add all contents to a blender and blend until smooth.
  3. Pour the syrup into a jar (no need to strain!) and keep in the fridge for 1-2 weeks.
Peanut Butter & Jelly Latte
  1. Add the syrup to a cup and brew your favorite espresso to your liking over top. I always allow it to chill/cool down by brewing the espresso over metal ice cubes or by using my hyperchiller so that the espresso doesn't become bitter as it cools.
  2. In a cup with ice, pour in the milk. Then, pour over the espresso with the syrup. Mix together and enjoy!
  3. Note: I sometimes like to pour the syrup into the glass with the ice or over the milk to really watch the colors swirl together because it's fun. It's not the "correct" way to do it, but in my opinion it's not about doing things the "right" way all the time!
