This delicious Whole30 Zucchini Noodle Ramen is as nourishing as it is easy. It’s made with all real ingredients and is perfect for anyone that’s looking for a dietary friendly version for traditional ramen.
Zucchini Noodle Ramen
While this recipe is not in line with the traditional and original methods of ramen, this version is sure to give you the flavors and comfort from the dish that you love, but without any gluten/grains, added sugar or dairy. Plus, it’s super easy to make and packed with nutrients.
No seriously, anyone could do it! It’s that easy. And once you’re done, there is nothing more satisfying than diving into that bowl of warm, flavorful broth with breaded chicken, nutritious veggies, and finally, a soft boiled egg.

Make it Your Own
This ramen recipe is great for anyone on a round of Whole30, but it’s also easy to modify for vegetarians, vegans and anyone doing the Plant-Based Whole30. Overall, it’s a great dish that can be enjoyed by anyone that loves ramen, soup and veggies.
If you’re a vegetarian, swap the chicken broth for veggie broth! I personally use Bonafide Provision Bone Broth for additional health benefits as it’s a great source of collagen while helping to keep your immunity strong. I also recommend using Otto’s Naturals Cassava Flour if you choose to add breaded chicken to this recipe. It’s a great way to keep this dish grain free and is my favorite flour to pair with chicken! Whole30 Zucchini Noodle Ramen
Equipment
- Veggie Spiralizer
Ingredients
Zucchini Noodles
- 1 small/medium zucchini
- salt
Broth
- 1 tbsp olive oil or avocado oil
- 3 tbsp coconut aminos
- 4 cups chicken broth or bone broth (sub veggie broth for vegetarian)
- ½ cup coconut milk
- ¼ cup rice vinegar (check for no sugar added)
- 2 coves garlic, minced
- 2 tsp onion powder
- 1 tsp ginger powder
- 1 bunch small bok choy or handful of spinach
- salt & pepper, to taste
Breaded Chicken
- 2 thin chicken breasts
- ¼ cup cassava flour (I use Otto's Naturals)
- 1 egg
- 2 tbsp avocado oil
- salt & pepper, to taste
Toppings
- green onion
- soft boiled eggs
- shredded carrot
- lime wedges
- sesame seeds
Instructions
Zucchini Noodles
- Wash and dry zucchini, then spiralize into "noodles".
- Spread out "noodles" on a towel and sprinkle with salt to get rid of the excess moisture.
Breaded Chicken
- If using chicken, prepare first. Whisk egg in a bowl and spread out flour on a plate.
- Heat olive oil or avocado oil in a skillet over medium heat until hot.
- Once the oil is hot, coat each chicken breast in the egg, then the flour and place into the skillet.
- Cook the chicken breast on each side for 5-7 minutes. It will turn golden brown.
- Once cooked, remove from the skillet and set on a drying rack to cool.
Broth & Soft Boiled Eggs
- Begin the broth by putting oil to the bottom of a pot until simmering. Then, add garlic and sauté until fragrant.
- Add coconut aminos, broth, rice vinegar and seasonings.
- Cover the pot with a tight fitting lid and bring to a boil. Once boiling, remove the lid and reduce the heat to medium low. Add chopped bok choy or spinach and coconut milk then let simmer on low, uncovered.
- While simmering, make the soft boiled eggs. Fill a pot with enough water to cover the eggs, and bring to a boil. Place the eggs into the water for 7-8 minutes.
- Once cooked, place the eggs into a bowl with cold water and ice cubes for 5 minutes. This helps the shell peel easier! Remove the shell and slice in half.
- Split the zucchini noodles into two bowls and cover with the broth. Top with green onions, soft boiled eggs, shredded carrots, sliced chicken, sesame seeds and a squeeze of lime.

I haven’t tried this exact recipe yet (looks delish, will try soon, can’t believe I never thought to use zucchini noodles in ramen) but I’ve been making something similar for a while now and one trick to save dishes is I just crack the egg directly into the soup to poach instead of boiling separately – at the end when the broth is at a low simmer, crack in the egg gently, cover, and cook for 3 minutes for a nice runny yolk. Then I just ladle right into the bowl along with the rest of the soup! So good, give the egg extra flavor too since it cooks in the broth.

My egg was a tad over cooked and the breading on the chicken fell off some in the brother but none of that matters becasue this recipe tastes so good!! My hubby even picked up his bowl to drink the broth at the end. Healthy, filling, and soul warming.

And don’t worry, it’s totally normal for the breading to fall off a little after sitting in the broth for a bit and also, soft boiled eggs are my least favorite thing to make.
