Brown the sausage on the stove over medium heat in 1 tbsp of avocado oil or olive oil.
While the sausage cooks, prepare all the remaining soup ingredients aside from the bacon.
Stove Top Option- Put all the ingredients into a pot on the stove and simmer until the potatoes are fork tender.
Slow Cooker Option- Put all the ingredient into the slow cooker and cook on high for 3 hours or low for 6 hours or until potatoes are fork tender.
While the soup cooks, cook the bacon on the stove or the oven (up to you!) then crumble pieces over the top when serving.
