Whole30 & Vegan BBQ Cauliflower Bites

Ingredients
  

  • 1 head cauliflower, cut into florets
  • 2 tbsp avocado oil or extra virgin olive oil
  • ¼ cup tapioca starch or tapioca flour
  • ½ cup paleo/Whole30 BBQ sauce

Instructions
 

  • Preheat your oven to 425°.
  • Chop your cauliflower into florets, then coat in a bowl with olive oil or avocado oil.
  • Toss the cauliflower florets with the tapioca starch/flour until coated evenly.
  • Space out cauliflower on a baking sheet lined with parchment paper. Ensure that they are not touching so that they cook best.
  • Bake for 25 minutes.
  • Remove the cauliflower from the oven and coat each piece in the BBQ sauce.
  • Bake the cauliflower for 10 more minutes, then broil on high (500°) for 2-5 minutes with the oven door cracked. Be sure to watch the cauliflower during this time as it can burn easily!
  • Serve warm with ranch if you so wish!

Notes

To reheat, use an air fryer to add some crisp!
