Whole30 Burgers with Potato Waffle Buns

Ingredients
  

Burgers
  • 1 lb ground beef
  • ¼ tsp onion powder
  • ¼-½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp avocado oil or olive oil, for cooking
Waffle Buns
  • ½ medium potato, grated (can use regular or sweet)
  • 2 eggs
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • avocado oil (the spray option is easiest here)
  • salt and pepper, to taste
Special Sauce
  • 2 tbsp compliant mayo (I use avocado mayo)
  • 1 tbsp compliant ketchup
  • 1 tsp rice vinegar (sub apple cider vinegar for paleo compliant)
  • 2 tsp compliant relish (I use Bubbie's)

  • Mini Waffle Iron

Method
 

Potato Waffles
  1. Grate half of a sweet or regular potato over a large bowl.
  2. Whisk eggs in a separate bowl and add to the shredded potato along with seasonings and mix together.
  3. Heat your waffle iron (I use a mini one from the brand Dash) and add a generous amount of avocado oil. Spray works best here! Let the iron heat up.
  4. Add a good amount of sweet potato to the iron and cook. The times I used more to make a thicker waffle were they times that it worked better for me. Don’t press down too hard on the iron to avoid sticking!
  5. Check on the waffle every few minutes until formed into a waffle shape and carefully remove when ready. I use two forks to gently remove the waffle. It will be hot!
Burgers
  1. Add all burger ingredients aside from the oil into a bowl and mix until combined evenly.
  2. Add oil to a skillet on the stove and cook on both sides until it's cooked as you like it best.
  3. Prep toppings and mix together sauce ingredients.
  4. Add your sandwich fixings to the waffle buns and enjoy!
