Whipped Ricotta

Ingredients
  

  • 1 cup ricotta (I use Kite Hill for dairy free & paleo)
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 garlic clove
  • ΒΌ cup olive oil
  • 1 tsp dried chives
  • 1 tsp dried basil
  • salt & pepper, to taste

Instructions
 

  • Blend ricotta, lemon zest, lemon juice, garlic clove, olive oil, herbs, salt and pepper together in a food processor until smooth.
  • Pair the whipped ricotta with tomato salad, toasted bread, crackers, honey or enjoy it as is!
