Chop tomatoes into small pieces and add to a pan on the stove with water and sugar over medium heat.
Bring the mixture to a slow simmer and allow to simmer until the sugar is fully dissolved and the tomatoes are slightly burst/mixed in. Be sure to mix as you go!
Turn off the heat and allow to cool completely. You can smash the tomatoes lightly in the syrup to release more flavor while you wait.
Strain the tomatoes out of the syrup with a fine mesh strainer and keep the syrup in a sealed jar.
Tomato Margarita
Add all ingredients to a shaker with ice and shake until the lid of the shaker is cold.
Pour the margarita into a glass with ice, garnish if desired and enjoy!
