Skillet Spinach Artichoke Dip

Ingredients
  

  • 1 tbsp butter, ghee or avocado oil
  • ½ yellow onion, chopped
  • 2-3 garlic, minced
  • 16 oz spinach, chopped
  • 14 oz artichoke hearts, chopped
  • 5 oz water chestnuts, chopped (optional)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 16 oz cottage cheese or farmer cheese
  • 2 tbsp nutritional yeast (can use shredded cheese if desired)
  • salt and pepper, to taste

Method
 

  1. Place a skillet or pan over medium heat on the stove. Let ghee, butter or avocado oil melt/warm in the pan.
  2. Sauté chopped yellow onion on the stove until soft, then add in the garlic until fragrant.
  3. Add in the chopped spinach and allow to wilt before adding the artichokes and water chestnuts. The water chestnuts are completely optional, but I just love them so add them in!
  4. Once warm, turn down the heat slightly and add a little salt and pepper over the top. If you'd like, you can pack down the spinach with a towel to remove some moisture.
  5. Add in the cottage cheese or farmer cheese, nutritional yeast, garlic powder and onion powder. Stir to fully incorporate it.
  6. Once the cheese is fully combined and warm, serve and enjoy!
