Salted Brownie Granola

Equipment

  • High Powdered Blender or Food Processor

Ingredients
  

  • 1 cup pitted dates
  • ½ cup water 
  • 1 tsp vanilla extract
  • 1 cup cashews
  • 1 cup almonds
  • 1 cup pumpkin seeds
  • 1 cup pecans
  • ½ cup cocoa powder
  • 1 cup shredded unsweetened coconut
  • ½ tsp salt
  • 2 tbsp chia seeds
  • 2 tbsp flaxseeds
  • ½ cup coconut oil, melted
  • 2 tbsp maple syrup (optional, for extra sweetness)

Instructions
 

  • Preheat your oven to 350° F and line a baking sheet with parchment paper.
  • In a pot on the stove, combine water, dates and vanilla extract. Heat over medium heat for 5-10 minutes or until the dates are soft.
  • Pour the water, vanilla and dates into a blender or food processor and blend until smooth to make a homemade date paste.
  • In a large bowl, combine all of the ingredients, including the date paste, and mix until fully combined.
  • Spread out the mixture onto the parchment lined baking sheet making it as thin of a layer as you can.
  • Bake for 20-25 minutes, flipping the granola half way through the bake time.
  • Remove from the oven and allow to cool for 10-15 minutes.
  • Once cool, break up the granola and store in an airtight container to be enjoyed throughout the month!

Notes

You are welcome to change up the nuts that are listed in this recipe based on what you have on hand or depending on what your favorite nuts/seeds are. Just be sure you have the same amount of each and don't use more or less than what the recipe calls for in order to have the same results!
