Ranch Chicken Salad

Ingredients
  

  • 1 lb chicken, shredded
  • 6-8 small stalks organic celery, diced
  • ½ red onion, diced
  • ¾ cup compliant mayo (I make my own, recipes linked in this post!)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • ½ tsp dried dill
  • 1 tsp dried chives
  • 1 tsp dried cilantro 
  • ½ tsp salt
  • crack of black pepper 

Instructions
 

  • Cook your chicken and prep other ingredients while you wait. I boil my chicken on the stove then shred it with a hand mixer once ready.
  • Prep the celery and red onion, then combine them in a bowl with the shredded chicken, mayo and all of the spices and herbs.
  • Eat alone, with crackers or in a lettuce wrap for Whole30.
