Rainbow Ranch Sheet Pan Meal

Ingredients
  

Ranch Marinade

  • 3 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp dried parsley
  • ¼ tsp dried dill
  • ½ tsp dried chives
  • ½ tsp dried cilantro 
  • ¼ tsp salt
  • crack of black pepper 
  • 2 tsp coconut milk powder

Produce (Customize to Your Liking!)

  • 1 cup cherry tomatoes, halved
  • 1 cup carrots
  • 1 cup potatoes, cubed
  • 1 cup yellow squash
  • 1 cup broccoli florets
  • ½ cup red onion
  • 1 can chickpeas OR 1 lb chicken

Instructions
 

  • Preheat your oven to 425° F.
  • Mix together all of the Ranch Marinade ingredients & prep all of the veggies you'll be using.
  • Place the veggies on a rimmed baking sheet and coat in the Ranch Marinade. Use your hands to ensure everything is evenly coated and spaced out on the sheet.
  • Bake for 20-30 minutes, watching and removing any pieces that are browning as some produce will bake faster than others.
