PopCorn on the Cob Treats

Equipment

  • 8 square sheets of brown parchment paper

Ingredients
  

  • 1 10 oz package mini marshmallows (vegan, as needed)
  • ¼ cup butter (vegan, as needed)
  • 1 tsp vanilla extract
  • 9 cups popcorn (I use LesserEvil Pumpkin Spice)
  • ¼-½ cup chocolate candies (I use Lakanto chocolate gems for fall colors)

Instructions
 

  • Prep the parchment paper “husks” by folding each piece equally into 8 pieces, accordion style.
  • Next, cut out a thin, pointy triangle from one of the ends, then set the parchment paper pieces aside.
  • In a skillet on the stove over medium heat, melt the butter.
  • Then, add in marshmallows, mixing consistently until melted.
  • Once melted, stir in the vanilla.
  • Add popcorn to a large bowl, then pour in the marshmallow, gently mixing and evenly coating.
  • Next, you can either mix in the candies which will create a darker color as the candy may melt some (which looks great for a fall treat!) or you can press candies into the completed “cobs” after step 9.
  • Form the corn sob shapes with your hands.
  • Wrap each cob in the parchment paper “husks,” twist the end of the paper at the bottom and pull down some of the points for a more natural look.
