Pineapple Coconut Cloud Smoothie

Ingredients
  

Smoothie

  • 1 cup nut milk or water (I recommend unsweetened vanilla almond milk or canned coconut milk)
  • 2 scoops vanilla collagen or protein powder (I use Further Food Vanilla Collagen)
  • ½ cup frozen cauliflower (can sub ½ frozen banana)
  • 1 ½ cup frozen pineapple
  • ½ tsp spirulina powder
  • ¼-½ avocado

Cloud Swirl

  • canned coconut cream, whipped
  • ¼ tsp spirulina powder

Instructions
 

  • Open a can of coconut cream and add to a large bowl. Mix with a hand mixer until fluffy, then set aside.
  • Blend all of the smoothie ingredients until smooth.
  • Add whipped coconut cream to the bottom of your glass, followed by a small amount of spirulina powder.
  • Pour the smoothie over top and watch the colors swirl. Top the smoothie with a spoonful of the whipped coconut cream and enjoy! Use a straw to create more dramatic swirls if you wish.

Notes

Some modification notes:
  • If using unflavored collagen or protein powder, use 2 scoops protein/collagen + 1 tsp vanilla + 1/2 tsp stevia OR use 2 scoops protein/collagen + 1 tsp vanilla stevia
  • If vegan or vegetarian, use protein powder of choice
  • If you'd rather use banana instead of cauliflower, feel free
  • If limiting nut products, use water in place of nut milk
Keep the whipped coconut cream refrigerated in an airtight container to enjoy throughout the week.
