Combine all ingredients in a high powered food processor or blender and blend until smooth. TIP: If your food processor or blender isn’t super high powered, leave out the chickpeas and pickle brine/juice and blend everything else together first. Then, in two batches, add in the chickpeas and pickle brine/juice to blend. This helps create a really smooth texture!
Stir in remaining ¼ cup diced pickles and taste. You can add in more pickles here if you’d like!
Spoon into a bowl and top with more diced pickles, a drizzle of olive oil and dill.
