Preheat your oven to 425°.
Poke your sweet potatoes and microwave them for 4-10 minutes for 2 minute increments until soft. The potato should give/indent when you poke it. Note: when selecting your potatoes, skinner/longer ones heat easier than thicker/rounder ones!
Allow the potatoes to cool to the touch, then remove the skin and place the inside of the sweet potato into a bowl.
Mash the potatoes with ghee, then stir in nutritional yeast, dried oregano, onion powder and garlic powder.
In a separate bowl, mix together the tapioca starch, chili powder, salt and pepper.
Scoop 1 tbsp of sweet potato and roll into tot shapes.
Roll sweet potato tots into the tapioca mixture and spread them out on a parchment lined baking sheet.
Spray tots with avocado spray or gently brush with avocado oil.
Bake the tots for 15 minutes then flip and bake for 15 more.
Top with fresh herbs (optional) and serve with dipping sauces of choice!
