Ingredients
  

Chicken

  • ~1 lb chicken breast (4 chicken breasts, cut thin)
  • 2 tbsp extra virgin olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Italian seasoning
  • squeeze fresh lemon
  • pinch salt

Bruschetta

  • 2 cups tomatoes, diced (can be whatever tomatoes you like, but aim to avoid seeds and soft pieces)
  • 2 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (check for paleo compliant ingredients)
  • cup fresh basil, roughly chopped
  • salt and pepper, to taste

Instructions
 

Chicken

  • Mix all ingredients aside from the chicken itself until evenly combined.
  • Cover the chicken in the marinade and cook your chicken on the stove or on a grill until cooked completely.

Bruschetta

  • Dice the tomatoes, mince the garlic and chop the basil.
  • Add all ingredients to a bowl and mix gently to combine.

To Serve

  • Plate chicken and top with the bruschetta and a drizzle of the homemade balsamic glaze or balsamic vinegar, if using. Garnish with fresh basil and enjoy!
