Ingredients
  

Chicken
  • ~1 lb chicken breast (4 chicken breasts, cut thin)
  • 2 tbsp extra virgin olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Italian seasoning
  • squeeze fresh lemon
  • pinch salt
Bruschetta
  • 2 cups tomatoes, diced (can be whatever tomatoes you like, but aim to avoid seeds and soft pieces)
  • 2 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (check for paleo compliant ingredients)
  • cup fresh basil, roughly chopped
  • salt and pepper, to taste

Method
 

Chicken
  1. Mix all ingredients aside from the chicken itself until evenly combined.
  2. Cover the chicken in the marinade and cook your chicken on the stove or on a grill until cooked completely.
Bruschetta
  1. Dice the tomatoes, mince the garlic and chop the basil.
  2. Add all ingredients to a bowl and mix gently to combine.
To Serve
  1. Plate chicken and top with the bruschetta and a drizzle of the homemade balsamic glaze or balsamic vinegar, if using. Garnish with fresh basil and enjoy!
