Paleo Apple Crumble

Ingredients
  

Apple Filling

  • 3 cups apple slices (you can peel them if you'd like, but I like to leave the skin on!)
  • 2 tbsp coconut sugar
  • ½ tbsp lemon juice
  • 1 tbsp tapioca starch or arrowroot
  • ½ tsp cinnamon
  • ¼ tsp salt

Crumble Topping

  • ½ cup almond flour
  • 2 tbsp cassava flour
  • ¼ cup coconut sugar
  • 2 tbsp maple syrup
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • 2 tbsp butter or ghee, melted (can use dairy free as needed)
  • ¼ tsp salt

Instructions
 

  • Preheat your oven to 375℉
  • Slice 3 cups worth of apples (I typically use gala, but your favorite variety will work).
  • Add the apple slices to a bowl then toss with the apple filling ingredients until the apple slices are evenly covered. Add the apples to a small baking dish.
  • Combine crumble ingredients and mix until clumps form.
  • Crumble the topping on top of the apple slices.
  • Bake the crumble for 30-40 minutes (depending on your oven, be sure to check on it!). It will be ready when the apples are sizzling and the top is golden brown.
  • Serve with ice cream and a caramel drizzle if you'd like. It's best served right out of the oven!
