No Mayo Smashed Chickpea Salad

Ingredients
  

  • 1 15 oz can chickpeas, rinsed and drained
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp tahini
  • ½ lemon, juice of
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper
  • cup celery, diced
  • ¼ cup red onion, diced

Instructions
 

  • In a large bowl, combine chickpeas, olive oil, tahini, lemon juice and garlic powder and stir, then smash lightly with a fork until you reach your desired consistency.
  • Add in salt and pepper, to taste, as well as diced celery and diced red onion. Mix together.
  • Serve in a sandwich or lettuce wrap with your favorite toppings (i.e. cucumber slices, vegan mayo, avocado, sprouts, greens, etc.)!
