In a large bowl, combine chickpeas, olive oil, tahini, lemon juice and garlic powder and stir, then smash lightly with a fork until you reach your desired consistency.
Add in salt and pepper, to taste, as well as diced celery and diced red onion. Mix together.
Serve in a sandwich or lettuce wrap with your favorite toppings (i.e. cucumber slices, vegan mayo, avocado, sprouts, greens, etc.)!
