No Mayo Potato Salad

Ingredients
  

  • 6 medium red organic potatoes
  • ¼ cup olive oil
  • ¼ cup dill
  • ¼ cup chives
  • 1 tbsp Dijon mustard
  • 1 lemon
  • 1 tbsp garlic
  • 1 tbsp apple cider vinegar
  • salt and pepper, to taste

Instructions
 

  • Cut potatoes in half and cover with water in a pot over med/high heat until boiling. Let simmer until fork tender (15-20 minutes) then drain.
  • Combine all ingredients or the dressing, aside from the dill and chives. Add potatoes, herbs and dressing and stir until the potatoes are evenly covered.
  • Let sit for 10 minutes or so to allow the dressing to sink into the potatoes.
