Mixed Berry Lemon Poppyseed Salad

Ingredients
  

Poppyseed Dressing

  • ¼ cup canned coconut cream (can use chilled canned coconut milk)
  • ¼ cup extra virgin olive oil
  • 1 lemon, zested and juiced
  • 1 tbsp apple cider vinegar
  • 2 tbsp pure maple syrup

    (can sub honey if not vegan or homemade date paste for Whole30)


  • 1 tsp Dijon mustard
  • ½ tbsp poppyseeds
  • ¼ tsp salt

Salad fixings

  • spinach
  • chicken (omit if vegetarian/vegan)
  • strawberries
  • blueberries
  • bacon (sugar free if Whole30 or paleo, omit if vegetarian/vegan)
  • red onion
  • walnuts
  • poppyseed dressing

Instructions
 

Lemon Poppyseed Dressing

  • Combine all ingredients aside from poppyseeds into a food processor. Blend until smooth.
  • Stir in poppyseeds and set aside.

Mixed Berry Lemon Poppyseed Dressing

  • Add all of the salad ingredients of choice to your favorite plate or bowl and drizzle the Lemon Poppyseed Dressing on top. Enjoy!
