Mixed Berry Lemon Poppyseed Salad

Ingredients
  

Poppyseed Dressing
  • ¼ cup canned coconut cream (can use chilled canned coconut milk)
  • ¼ cup extra virgin olive oil
  • 1 lemon, zested and juiced
  • 1 tbsp apple cider vinegar
  • 2 tbsp pure maple syrup

    (can sub honey if not vegan or homemade date paste for Whole30)


  • 1 tsp Dijon mustard
  • ½ tbsp poppyseeds
  • ¼ tsp salt
Salad fixings
  • spinach
  • chicken (omit if vegetarian/vegan)
  • strawberries
  • blueberries
  • bacon (sugar free if Whole30 or paleo, omit if vegetarian/vegan)
  • red onion
  • walnuts
  • poppyseed dressing

Equipment

  • Food Processor

Method
 

Lemon Poppyseed Dressing
  1. Combine all ingredients aside from poppyseeds into a food processor. Blend until smooth.
  2. Stir in poppyseeds and set aside.
Mixed Berry Lemon Poppyseed Dressing
  1. Add all of the salad ingredients of choice to your favorite plate or bowl and drizzle the Lemon Poppyseed Dressing on top. Enjoy!
