Preheat your oven to 400° and line two baking sheets with parchment paper.
Slice potatoes using a mandoline.
SPACE out potato slices and brush or spray with oil. Top with salt and pepper.
Bake for 30-45 min until as crispy as desired. Depending on the oven, the outside slices may crisp faster, so feel free to remove those and keep the middle ones baking.
Taco Meat
Heat oil in a skillet on the stove over medium/low heat.
Once hot, add your ground meat to the skillet.
Break the meat apart as it cooks, then mix in the seasonings and water once browned.
