Loaded Taco Potato “Nachos”

Ingredients
  

Potatoes

  • 3 small-medium potatoes
  • ~1 tbsp olive oil or avocado oil
  • salt & pepper, to taste

Taco Meat:

  • 1 lb ground meat (beef, chicken or turkey)
  • 1 tbsp olive oil or avocado oil
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • 1 ½ tsp cumin
  • 1 tsp salt
  • cup cup water

Toppings (customize to your liking)

  • canned coconut cream
  • red onion, diced
  • avocado
  • fresh cilantro
  • shredded lettuce
  • cherry tomatoes
  • salsa
  • lime wedge
  • salt & pepper

Instructions
 

Potatoes

  • Preheat your oven to 400° and line two baking sheets with parchment paper.
  • Slice potatoes using a mandoline.
  • SPACE out potato slices and brush or spray with oil. Top with salt and pepper.
  • Bake for 30-45 min until as crispy as desired. Depending on the oven, the outside slices may crisp faster, so feel free to remove those and keep the middle ones baking.

Taco Meat

  • Heat oil in a skillet on the stove over medium/low heat.
  • Once hot, add your ground meat to the skillet.
  • Break the meat apart as it cooks, then mix in the seasonings and water once browned.

Loaded Taco Potato “Nachos”

  • Aseemble crispy potato slices, then top with taco meat and all of your desired toppings.
