Method
- Chop and sauté carrots, celery, onion and garlic in ghee on the stove until fragrant, then add to a slow cooker or pot on the stove along with the broth, seasonings, oil and chicken.
- Stove Option - Allow the soup to simmer until the chicken is cooked completely.
- Slow Cooker Option - Cook on high for three hours or low for six or until the chicken is completely cooked.
- While the soup simmers and the chicken cooks, prepare orzo according to instructions.
- Once the chicken is cooked, remove and shred, then add back to the soup.
- Add in the orzo and lemon then mix to combine.
- Top with additional herbs if desired and serve warm!
Notes
When enjoying leftovers, feel free to add additional broth as the orzo may absorb some of the liquid.
