1boxcassava orzo(I use Jovial Foods)
Instructions
Chop and sauté carrots, celery, onion and garlic in ghee on the stove until fragrant, then add to a slow cooker or pot on the stove along with the broth, seasonings, oil and chicken.
Stove Option - Allow the soup to simmer until the chicken is cooked completely.
Slow Cooker Option - Cook on high for three hours or low for six or until the chicken is completely cooked.
While the soup simmers and the chicken cooks, prepare orzo according to instructions.
Once the chicken is cooked, remove and shred, then add back to the soup.
Add in the orzo and lemon then mix to combine.
Top with additional herbs if desired and serve warm!
Notes
When enjoying leftovers, feel free to add additional broth as the orzo may absorb some of the liquid.
