Combine water and sugar or monk fruit in a pot on the stove over medium heat.
Bring to a slight simmer and keep an eye on the mixture, mixing lightly as it dissolves.
Once the mixture is clear and the sugar is completely dissolved, remove the pot from the heat and mix in the dried elderflower. Allow to sit for 5-10 minutes, mixing every so often.
Using a strainer to catch the elderflowers, pour the syrup into a container and set aside. Store in the fridge with a lid.

In a glass, pour in all of the ingredients and then fill it with ice.
Garnish with a lime wedge and a mint sprig. Cheers!
