Make the marinade by combining all of your ingredients together.
Cube your chicken, keeping in mind you'll want the rest of your ingredients to be around the same size. Then, combine the chicken and the marinade and allow to sit in the fridge for 30 minutes and up to overnight.
Prep your pineapple, red onion, zucchini and summer squash, aiming to keep each piece around the same size as the chicken pieces.
Once marinated, add the ingredients to a skewer in whatever order you like, grill evenly on all sides until cooked through and enjoy!
