Preheat your oven to 450°.
On a baking sheet, toss cherry tomatoes, sliced zucchini (your choice to remove the skin or not), cauliflower florets, a bulb of garlic, sliced onions, and chopped thyme and seasonings in olive oil or avocado oil. Sprinkle salt and pepper over the top and spread out evenly.
Bake the veggies in the oven for 30 minutes.
When you have five minutes left of bake time, combine the remaining ingredients on the stove in a pot over medium low heat and stir.
Once the veggies are done, add them to the pot and combine. Next, either blend the soup contents in your blender or use an immersion blender.
Blend until desired consistency, then serve warm!
