Ingredients
  

  • 1 zucchini
  • 2 pints cherry tomatoes
  • 12 oz cauliflower florets
  • 1 bulb garlic
  • 1 onion
  • 2 tsp fresh thyme
  • 1 tbsp fresh basil
  • 3 tbsp olive oil
  • salt and pepper, to taste
  • 1 cup coconut milk
  • 1 cup veggie or chicken broth
  • 1 tsp paprika
  • 1 tsp Italian seasoning

Instructions
 

  • Preheat your oven to 450°.
  • On a baking sheet, toss cherry tomatoes, sliced zucchini (your choice to remove the skin or not), cauliflower florets, a bulb of garlic, sliced onions, and chopped thyme and seasonings in olive oil or avocado oil. Sprinkle salt and pepper over the top and spread out evenly.
  • Bake the veggies in the oven for 30 minutes.
  • When you have five minutes left of bake time, combine the remaining ingredients on the stove in a pot over medium low heat and stir.
  • Once the veggies are done, add them to the pot and combine. Next, either blend the soup contents in your blender or use an immersion blender.
  • Blend until desired consistency, then serve warm!
