Combine peanut butter and powdered sugar together until well combined. You may need to sift your powdered sugar to avoid clumps.
Mix in your vanilla, then line a baking sheet with parchment paper.
Roll peanut butter into balls about the width of a quarter. You should have around 20!
Freeze the peanut butter balls for 20ish minutes or until very firm.
Melt the chocolate chips and stir until smooth.
Take the peanut butter balls out of the freezer and use a toothpick to dip each ball into the chocolate. Set each piece back onto the parchment paper lined baking sheet. Work quickly so that the peanut butter balls don’t soften!
Once all of the balls are coated, place them back into the freezer until the chocolate has completely hardened.
Keep refrigerated until ready to eat!
