Healthified Buckeyes

Ingredients
  

  • 1 cup unsweetened peanut butter
  • 1 ¼ cup monk fruit powdered sugar (I use Lakanto for low sugar, can sub regular powdered sugar if needed)
  • 1 tsp vanilla extract
  • ½ - ¾ cup chocolate chips (I use Enjoy Life Foods to keep them dairy free, can use Lily's to keep sugar free)

Instructions
 

  • Combine peanut butter and powdered sugar together until well combined. You may need to sift your powdered sugar to avoid clumps.
  • Mix in your vanilla, then line a baking sheet with parchment paper.
  • Roll peanut butter into balls about the width of a quarter. You should have around 20!
  • Freeze the peanut butter balls for 20ish minutes or until very firm.
  • Melt the chocolate chips and stir until smooth.
  • Take the peanut butter balls out of the freezer and use a toothpick to dip each ball into the chocolate. Set each piece back onto the parchment paper lined baking sheet. Work quickly so that the peanut butter balls don’t soften!
  • Once all of the balls are coated, place them back into the freezer until the chocolate has completely hardened.
  • Keep refrigerated until ready to eat!
