Green Dream Chicken Salad

Ingredients
  

  • 1 lb chicken, cooked and chopped or shredded
  • 1 cup celery, diced
  • 1 cup walnuts
  • ¾ cup compliant mayo
  • 1 large avocado (~1 cup)
  • ¼ cup green onions, chopped
  • 2 tbsp chives, chopped
  • ½ cup arugula
  • 2 cups green apples, diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper

Method
 

  1. In a food processor, combine mayo and avocado. Blend until smooth and fully combined.
  2. In a large bowl, combine all of your ingredients and mix until everything is evenly covered in the avocado mayo "sauce."
  3. Enjoy with crackers, lettuce wraps, toast, chips or anything you like!
