Ingredients

cup
cassava flour
(I use Otto's Naturals)
2
tbsp
vanilla protein powder
(I use Nutrilite Organics Vanilla Protein Powder)

cup
water
¾
cup
unsweetened vanilla almond milk
2
eggs
½
tsp
vanilla extract
2
tbsp
monk fruit sugar
(I use Lakanto or Miss Jones Bakes for sugar free, can sub regular sugar)

oil for baking in the skillet
Instructions
Add all ingredients to a blender and blend until smooth.
In a skillet over medium heat, add a small bit of oil to grease the skillet.
Pour in about a fourth cup of batter ensuring it spreads out on the skillet.
Allow to cook until bubbles form, the flip and cook for a few more minutes. Crepes should be flexible and on the thin side.
Once both sides are golden, remove from the skillet and serve with toppings of your choice.
