Gluten Free Protein Crepes

Ingredients
  

  • ½ cup cassava flour (I use Otto's Naturals)
  • 2 tbsp vanilla protein powder (I use Nutrilite Organics Vanilla Protein Powder)
  • ¼ cup water
  • ¾ cup unsweetened vanilla almond milk
  • 2 eggs
  • ½ tsp vanilla extract
  • 2 tbsp monk fruit sugar (I use Lakanto or Miss Jones Bakes for sugar free, can sub regular sugar)
  • ¼ tsp salt
  • oil for baking in the skillet

Instructions
 

  • Add all ingredients to a blender and blend until smooth.
  • In a skillet over medium heat, add a small bit of oil to grease the skillet.
  • Pour in about a fourth cup of batter ensuring it spreads out on the skillet.
  • Allow to cook until bubbles form, the flip and cook for a few more minutes. Crepes should be flexible and on the thin side.
  • Once both sides are golden, remove from the skillet and serve with toppings of your choice.
