Preheat your oven to 350℉ and line a 8.5 x 4.5 inch loaf tin with parchment paper.
Grate your zucchini and wring dry using a nut milk or cheese cloth bag to remove as much of the moisture as you can.
In a large bowl, mix together all of the ingredients until fully combined.
Add the batter to the lined loaf tin.
Bake for 1 hour and 20-30 minutes (or until a toothpick comes out clean from the center).
Allow to cool for 10 minutes, then remove the bread from the loaf tin.
Once fully cool, slice then store in an air tight container in the refrigerator!
