Flourless Chocolate Chip Zucchini Bread

Ingredients
  

  • 1 zucchini shredded
  • 2 eggs
  • cup maple syrup or honey
  • ½ cup unsweetened peanut butter
  • 1 tsp baking soda
  • 2 scoops collagen can sub protein powder of choice
  • 1 tsp cinnamon
  • ½ dark chocolate bar or handful chocolate chips
  • Pinch sea salt to top optional

Instructions
 

  • Preheat oven to 350 degrees and line a baking tin with parchment paper.
  • Shred zucchini onto a towel or into a nut milk bag to wring out moisture. The drier the better here!
  • Mix together zucchini, eggs, syrup/honey and peanut butter until combined.
  • Stir in collagen/protein powder, baking soda, cinnamon and majority of the chocolate.
  • Spoon batter evenly into the tin and top with the remainder of chocolate.
  • Bake for 45-50 minutes.
  • Top with sea salt and slice the loaf into little pieces of heaven.
