Crispy Roasted Chickpeas - Vegan Ranch

Ingredients
  

  • 1 can chickpeas/garbanzo beans
  • 1 tbsp avocado oil 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp dried parsley
  • ¼ tsp dried dill
  • ¼ tsp dried chives
  • ¼ tsp dried cilantro 
  • ¼ tsp salt
  • crack of black pepper 
  • 2 tsp coconut milk powder

Instructions
 

  • Preheat your oven to 400°.
  • Drain and rinse chickpeas, then dry thoroughly. Be sure to remove any loose skins. Line a baking sheet with parchment paper.
  • Pour dry chickpeas into a bowl and add in avocado oil and seasonings. Stir to coat evenly.
  • Spread out chickpeas on the baking sheet.
  • Bake for 25 minutes then toss and return to the oven for 25 more minutes.
  • Remove from oven and allow to cool before enjoying.
