Crispy Roasted Chickpeas - Vegan Ranch

Ingredients
  

  • 1 can chickpeas/garbanzo beans
  • 1 tbsp avocado oil 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp dried parsley
  • ¼ tsp dried dill
  • ¼ tsp dried chives
  • ¼ tsp dried cilantro 
  • ¼ tsp salt
  • crack of black pepper 
  • 2 tsp coconut milk powder

Method
 

  1. Preheat your oven to 400°.
  2. Drain and rinse chickpeas, then dry thoroughly. Be sure to remove any loose skins. Line a baking sheet with parchment paper.
  3. Pour dry chickpeas into a bowl and add in avocado oil and seasonings. Stir to coat evenly.
  4. Spread out chickpeas on the baking sheet.
  5. Bake for 25 minutes then toss and return to the oven for 25 more minutes.
  6. Remove from oven and allow to cool before enjoying.
