Combine the chicken (cubed into super small pieces) with paprika, cumin, onion powder, garlic powder, salt, pepper and olive oil in a large bowl. Cover and allow to marinate in the fridge for at least 30 minutes.
Pour the entire bowl of chicken with the olive oil and spices into a pan on the stove over medium heat.
Once the chicken is almost cooked through and the olive oil is absorbing, add the onion and garlic to finish cooking with the chicken.
In a clean pan over medium heat, sprinkle in a circle of cheese and place a tortilla on top. Then, sprinkle cheese over the other side of the tortilla and spoon the chicken onto one half of the tortilla.
Once the cheese is brown on the outside of the tortilla, fold it over to cover the chicken and allow it to cook a little longer so that the cheese melts into the chicken on the inside.
Flip the quesadilla once then remove it from the pan once the outside is super crispy and golden.
Repeat until you've made all the quesadillas you intend to eat right away. Note that I make the quesadillas as I'm ready to eat them so they are fresh and crispy! It's best to not make them all at once if they won't be eaten right away.
Serve with garlic green sauce and enjoy!
