Creamy Pesto Pasta

Ingredients
  

  • pasta of choice (I use Jovial gluten free pasta)
  • 2 cups basil leaves, packed
  • ½ cup olive oil
  • ½ cup pine nuts
  • 2 garlic cloves
  • ¼ cup full fat coconut milk  (can sub heavy cream if needed)
  • ½ tsp salt (can add more to taste)

Equipment

  • Food Processor or Blender

Method
 

  1. Cook pasta of choice and set aside. If using gluten free pasta, I like to drain the pasta, skip the rinse and drizzle with olive oil to keep it from sticking.
  2. Combine all ingredients aside from the pasta into a food processor or blender and run until a sauce forms.
  3. Combine the pasta and creamy pesto in a large bowl and mix gently until evenly distributed.
