Copycat Cilantro Lime Chipotle Rice

Ingredients
  

  • 2 cups white rice
  • 4 cups water
  • 2 tbsp avocado oil
  • 1 tsp salt
  • cup cilantro, chopped
  • 2 tbsp lime, juiced

Method
 

  1. Combine rice, water, avocado oil and salt in a medium saucepan on the stove and bring to a boil.
  2. Once boiling, reduce the heat to low and cover. Let the rice simmer for 15 minutes or until no water remains.
  3. Remove from heat to cool slightly, then move to a bowl.
  4. Mix in the chopped cilantro and fresh lime. Add more salt to taste and serve!
