Chopped Salad with Mustard Vinaigrette

Ingredients
  

Salad
  • 3 bunches romaine
  • 1 bunch celery
  • 3-5 links chicken sausage links (Can sub any protein, I’d sub salami if not on Whole30!)
  • 3 hard boiled eggs
  • 1 large cucumber
  • ½ cup artichoke hearts
  • ½ cup carrots, shredded
  • ½ cup pepperoncini
Mustard Vinaigrette
  • ¼ cup apple cider vinegar
  • ½ cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp garlic, minced
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. Cook protein of choice, chop all fixings and toss together in a large bowl.
  2. Whisk together dressing ingredients or shake together in a mason jar with a lid.
  3. Serve for yourself or a group!
