Cherry Chip Smoothie Bowl

Ingredients
  

Cherry Chip Smoothie Bowl

  • 1 cup frozen cauliflower florets
  • 1 cup overflowing frozen cherries
  • ¼-½ cup water or nut milk of choice
  • 2 scoops chocolate protein powder or chocolate collagen of choice (I use Further Food chocolate collagen)
  • 2 tbsp cacao nibs

Optional “Magic Shell”

  • 1 tbsp coconut oil, melted
  • 1 tbsp cocoa powder or chocolate protein powder or chocolate collagen of choice (I use Further Food chocolate collagen)
  • ½ tbsp raw honey or pure maple syrup

Optional Toppings

  • dairy free whipped topping
  • fresh cherries
  • cacao nibs

Instructions
 

  • Combine all smoothie bowl ingredients aside from the cacao nibs in your blender and blend. Start with ¼ cup of liquid, and if you need assistance blending after scraping the sides a few times (which you’ll have to do!) add the additional ¼ cup of liquid.
  • Once smooth, add the smoothie to a bowl and spread out. Place this in the freezer while you make your chocolate topping (aka “Magic Shell”).
  • Heat coconut oil for 30 seconds in the microwave, then stir to rid of any lumps.
  • Add cocoa powder and sweetener of choice and stir until smooth.
  • Once the smoothie bowl has chilled slightly, pour the “Magic Shell” over the top and watch it harden.
  • Finish off your bowl with whipped topping, cherries and cacao nibs.
  • Crack open the “Magic Shell” with a spoon and dig in!
