Brown Butter Chocolate Chip Cookies

Ingredients
  

Wet
  • ½ cup browned unsalted butter, brought to room temperature (note that I have tried dairy free butter and they did not turn out!)
  • ½ cup sugar
  • ½ cup coconut sugar
  • 1 egg & 1 egg yolk
  • 1 tsp vanilla extract or vanilla bean paste
Dry
  • 1 ⅓ cup gluten free flour (I use Bob's Red Mill 1:1 Gluten Free)
  • ½ tsp baking powder (I use Otto's)
  • 1 tsp salt (use ½ tsp less as desired)
  • 1 cup chocolate chips (I like to use ½ mini and ½ regular)

Equipment

  • Parchment Paper
  • Large Baking Sheet (2 is ideal if you have them!)
  • Mixer
  • Spatula
  • Cookie Scoop or TBSP

Method
 

  1. Brown your butter on the stove. To do this, melt the butter in a pan over medium heat, stirring constantly until the butter turns a golden brown color and smells nutty. This process should take between 5-10 minutes. 
  2. Once browned, pour the butter into a large bowl to come to room temperature, which should take around 30 minutes.
  3. Line a plate or baking sheet with parchment paper.
  4. In the large bowl with the browned butter, add in the vanilla, sugar and the coconut sugar and mix together using a spatula until fully combined. Then, mix in the egg and egg yolk until just combined.
  5. In a separate bowl, whisk together the flour with the baking powder and salt.
  6. Add the flour mixture to the wet ingredients and using a spatula, fold the flour in until just about incorporated but some flour streaks remain.
  7. Add in the chocolate chips then finish folding together the dough until no flour streaks remain.
  8. Using a cookie scoop or a tbsp, fill overflowing spoonfuls to make 14 cookie dough balls. Note: I prefer to not roll or pack the dough together but to release the cookie scoop gently as I find it helps with the spread of the cookies.
  9. Place each cookie dough ball onto your parchment lined baking sheet or plate and place it in the fridge to chill for 1 full hour. I promise this step is important and worth it as with gluten free baking, this helps the flour absorb all that it needs to!
  10. Preheat your oven to 350℉ and line a large baking sheet with parchment paper. If you have 2 large baking sheets, even better!
  11. Once the cookie dough has fully chilled for 1 hour and your oven is preheated, space out 7 cookies on the parchment lined baking sheet and place the remaining dough in the fridge.
  12. Bake the cookies for 15-18 minutes. 15 minutes will likely result in a much softer interior and the outside will not be as crispy. 18-20 minutes will allow the outside to crisp more but will still be soft on the inside. Note: Every oven varies, so be sure to keep watch!
  13. Remove the first batch from the oven and allow them to sit for a few minutes to cool off slightly. If you try to move them too soon they will likely fall apart!
  14. Once ready, move the cookies to a cooling rack and bake the remaining cookies for the desired amount of time.
  15. Store leftovers in the fridge and most importantly, enjoy!
