Beet Goat Cheese Sauce

Ingredients
  

  • 4 oz goat cheese (can sub ricotta or dairy free ricotta)
  • 2-3 small beets, cubed (2 if you aren't crazy about beets, 3 if you love them)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or avocado oil
  • 2 tsp onion powder
  • ¼ cup gnocchi water or chicken/veggie broth
  • 1 tsp salt
  • ¼ tsp pepper

Method
 

  1. Preheat your oven to 400° F.
  2. Wash, dry and cube beets, then place in the center of a piece of foil.
  3. Drizzle the beet pieces with avocado oil or olive oil and wrap tightly with the foil.
  4. Place the foil wrapped beets on a baking sheet (feel free to use the same baking sheet as the potatoes if you're making the gnocchi as well) and bake for 25 minutes.
  5. Allow the beets to cool slightly, then add all of the remaining sauce ingredients in a food processor with the beets. Blend until completely smooth, then taste and adjust seasonings and consistency to your liking.
