Apple Crumble Loaf Cake - REGULAR GF FLOUR VERSION
2 ¼cupsgluten free all purpose flour(I've only used Bob's Red Mill 1:1 for this recipe)
1tspsalt
2tspbaking soda
1tbspcinnamon
½cupbutter, melted
2cupssugar(can sub coconut sugar)
2cupsunsweetened applesauce(I use my homemade recipe)
4eggs
Crumble Topping (Optional)
⅓cupblanched almond flour
2tbspcoconut sugar
1tbspmaple syrup
¼tspbaking powder
pinch salt
¼tspground cinnamon
1tbspbutter or ghee, melted(ghee or dairy free, as needed)
Powdered Sugar Glaze (Optional, only Paleo if compliant sugar is used)
6tbsppowdered sugar
1tbspmilk of choice
Instructions
Apple Crumble Loaf Cake - PALEO VERSION
Preheat oven to 350℉.
Whisk together almond flour, salt, baking powder, baking soda and cinnamon in a large bowl.
Then, in the center of the mixture, add in the eggs, applesauce, coconut sugar and vanilla and mix to combine completely with the dry ingredients.
In a separate bowl, combine the crumble topping (optional, but delicious!) and mix until combined.
Add batter to a loaf tin lined with parchment paper then sprinkle the crumble topping over the top of the batter.
Place in the center rack of the oven and bake for 50-60 minutes.
Mix together the powdered sugar glaze (if using) and drizzle over the top of the loaf cake right before serving.

Then, in the center of the mixture, add in the melted butter, sugar, applesauce and eggs and mix to combine completely with the dry ingredients.
In a separate bowl, combine the crumble topping (optional, but delicious!) and mix until combined.
Add batter to a loaf tin lined with parchment paper then sprinkle the crumble topping over the top of the batter.
Place in the center rack of the oven and bake for 50-60 minutes.
Mix together the powdered sugar glaze (if using) and drizzle over the top of the loaf cake right before serving.
Notes
Instead of sitting on top of the loaf, the crumble topping will likely sink into your cake which creates these amazing, gooey and sweet pockets within each slice!
Every oven is different, so I like to set my oven for the 40 minute mark and then check on the loaf and add time as needed. The cake is done when a toothpick comes out clean from the center of the loaf!
